All pork is seasonal, butchered in late November early December. It’s processed in a provincially inspected facility. Redtail does not use pre-mix in our sausages, all that is used is spices, herbs, salt and pepper. The following is what is included in a half of a pork.- 2 Packages of Spare Ribs
- 2 Packages of Smoked Hocks
- 1 Ham (cut into quarters)
- 12 Packages of Sausage
- Italian
- Breakfast
- 1 Belly of Bacon
- 1 Bag of Pork Chops
- 2 Packages of Ground Pork
