The cattle in our ”Butcher’s Take” program are raised on a third-generation regenerative farm, where we work hard to compassionately finish our livestock candidates on the same land they were lovingly raised on. This ensures the animals are treated with dignity and respect from start to finish, eliminating the animals’ stress.

Meet the Luing

Our herd consists mainly of Scottish Luing (pronounced “ling”), a hardy breed that is naturally acclimated to the harsh prairie winters. Originally created in Scotland, this versatile breed contains characteristics from two different breeds – the Beef Shothorn and the Highlander.

Adopting its fleshing qualities from the Beef Shorthorn and the rugged qualities from the Highlander, the Luing breed has an innate ability to forge and convert grass to fat, resulting in a succulent, marbled flavor-rich meat.

Our cattle graze on open pastures from birth till the time of their finishing. Our farm uses rotational and intensive grazing techniques that restore and regenerate the rich and diverse grasslands that we call home. We typically process ideal candidates at 16-18 months for the most optimal, tender, dining experience possible.

What does “uninspected meat products” mean in regards to The Butcher’s Take program?

When a customer purchases a whole animal from RedTail Farms, it guarantees that the animal will be raised and finished on-farm, instead of being transported and finished in an inspected processing facility. The meat products will be cut and wrapped in an inspected facility, but due to being finished on-farm, it needs to be labeled uninspected as stipulated by Alberta’s Meat Processing Guidelines.

The Butcher’s Take program includes everyday meat products and additional, less common cuts of meat. Is there a way I can learn about the different cuts and recommended cooking instructions?
